Whole 30 - Paleo Baked Turkey Meatballs

My grandma's famous meatballs have always been a favorite with my family.  I've been making them for years as a sort of tribute to my grandma.  We've always served them with pasta because that's just what we're used to.  That's what you're supposed to eat meatballs with right?  Well, when you're trying to eat healthier, pasta is unfortunately one of the first things I had to kick to the curb. It’s my weakness!

These turkey meatballs are super easy to whip up because they are BAKED!  They can be served with everything: spaghetti squash, in a salad or paired with any veggie you have on hand. 

Feel free to make a triple batch to make your life easier because they freeze really well and they are THAT GOOD!

Get yourself a big bowl and some latex gloves.  Yes, gloves, because it's apparently part of Murphy's law that once you stick your hands into raw meat your baby will inevitably start to cry and immediately need to be picked up!  Or maybe just my kids that have that strange 6th sense?  Eh, doubt it, so just trust me on this...get the gloves and use 'em.  You can thank me later.

Mix your wet and dry ingredients in separate bowls before combing them together.  Shape meat into round balls about 2 inches in diameter.  Place on a parchment lined baking sheet in a 400 degree oven for 25 minutes.  Once done, put meatballs into a pot of tomato sauce & let them simmer covered on low heat until you are ready to eat.  If you're doing a Whole 30, make sure the tomato sauce you are using has no added sugar.  Rao's Homemade Tomato sauce is really good!  Costco sells some good Whole 30 compliant jarred sauce too, if you'd like to buy in bulk.


Whole 30 - Paleo Baked Turkey Meatball Recipe

(makes about 20 meatballs)

Ingredients:

(Wet Ingredients)

(Dry Ingredients)

Instructions:

  1. Preheat oven to 400 degrees

  2. In a large bowl, mix the wet ingredients (ground turkey, onion, milk, egg and olive oil.)

  3. In a small bowl, mix the dry ingredients to make sure that all of the spices are evenly distributed throughout each meatball.

  4. Add the spices to the wet ingredients and mix well until everything is evenly incorporated.

  5. Shape into meatballs about 2 inches in diameter. The mixture will feel wet.

  6. Place on a parchment lined baking sheet in a 400 degree oven for 25 minutes.

  7. Once meatballs are done, keep them warm by placing them in a pot of tomato sauce on the stove until you are ready to serve them. The longer they sit in the sauce, the better they'll taste!

Serve with spaghetti squash, roasted broccoli, in a salad or just eat them plain as a snack! Enjoy!
