Gluten Free, Dairy Free, Banana, Chocolate Chip Cookie Dough Munchkins

Cookie dough anything is a favorite in our family but unfortunately, it’s  often loaded with a lot of refined sugar, something we try to stay away from as much as possible in our house.  I wanted to come up with a yummy, easy to bake,  gluten free, refined sugar free treat that is both kid friendly, tasty, and not dismissed as a “healthy dessert.”

My whole family is onto my tactics…especially my older girls.  They no longer excitedly grab the desserts I’ve made off of the counter. I think I went too far the day I snuck some avocado in the brownie batter. 

This recipe is an attempt to redeem my healthy dessert fails.  I think it did the trick!  As a busy mama that prioritizes feeding my family nutritious, healthy meals and snacks, simple recipes are a must in our home.

Overwhelmed mamas often fall into the trap that says simple equals buying a prepackaged yummy dessert from the store or purchasing a cake, cookie or brownie mix in a box. The majority of these options are full of harmful additives and oils.

These gluten free, dairy free, banana chocolate chip cookie dough munchkins are the perfect way to help you use up bananas that are starting to turn brown.  It’s a recipe that’s easy enough for your kids to help make!

To make it, preheat the oven to 350 degrees. Line a sheet pan with wax paper or a reusable silicone baking mat. Measure out the dry ingredients - almond flour, coconut flour and chia seeds, and mix well.

Add in your wet ingredients - eggs, banana, vanilla, coconut oil, honey and milk. Mash the banana with a fork and stir until it’s well blended and has the consistency of cookie dough.

Fold in the chocolate chips. We love the quality of the ingredients in Enjoy Life Chocolate Chips.

Form cookie dough balls about 1.5 inches in diameter and place on a lined baking sheet.

My girls love rolling the dough into balls, with washed hands of course! ;-) You can use a small ice cream scoop to scoop the dough and ensure they are each the same size, if you’d like.

Bake at 350 degrees for 15-18 minutes or until the munchkins brown slightly.

Paleo, Banana Chocolate Chip Cookie Dough Munchkins

(makes 20 - 1.5 in. munchkins)

INGREDIENTS:

•2 Cups Almond Flour

•1/2 Cup Coconut Flour

•1/2 TBSP Chia Seeds

•2 Eggs

•2 Bananas Mashed

•1 TSP 100% Vanilla Extract

•1/4 Cup Honey

•1 TBSP Coconut Oil

•1/2 Cup Enjoy Life Chocolate Chips

•1/2 Cup Dairy Free Milk (We love Califia Farms Unsweetened Vanilla Almond Milk)

DIRECTIONS:

1. Start by preheating the oven to 350 degrees. 

2. Line a sheet pan with parchment paper or a reusable silicone mat.

3. Mix the dry ingredients - almond flour, coconut flour and chia seeds together in a large bowl.

4. Mix in the wet ingredients - eggs, mashed bananas, vanilla, honey, dairy free milk and coconut oil.

5. Fold in the chocolate chips until a soft dough forms.

6. Shape the dough into 1.5 inch cookie dough balls and place evenly separated on the pan.

7. Bake at 350 degrees for 15-18 minutes or until the munchkins start lightly browning.
